Method
- 1 Heat a heavy-bottomed kadai and add 2 tablespoons of ghee, letting it melt until it shimmers.
- 2 Add the ragi flour and roast on a low flame for about 8-10 minutes until the raw smell vanishes and it turns a deep chocolate brown.
- 3 While the flour roasts, mash the bananas in a separate bowl until they are a smooth, lump-free puree.
- 4 Mix the mashed bananas and jaggery into the roasted flour, stirring vigorously until the mixture starts to leave the sides of the pan.
- 5 Add the remaining ghee, cashew powder, and cardamom; stir until the aroma fills your kitchen and the dough feels soft but not sticky.
- 6 Turn off the heat and let the mixture cool just enough so you can handle it comfortably.
- 7 Grease your palms with a drop of ghee and roll small, walnut-sized balls while the mixture is still slightly warm.
- 8 Allow the ladoos to firm up completely on a steel plate before storing them away.
